Ham, Ham, and More Ham

I have more leftover ham in my fridge from Easter dinner than I know what to do with! I decided to search the internet for some new ideas on how to make the most of this ham because I have a whole new appreciation for leftovers these days! Tonight, I'm taking my leftover scalloped potatoes and using them with the ham for a version of this Ham and Potato Casserole recipe from one of my favorite websites for recipes, Allrecipes.com.

Here are a few additional ideas I found for breakfast, lunch and dinner from Delish.

Breakfast: I'm super excited to try the Cloud Eggs from Delish! I've never tried a recipe like this. The Omelet Waffle is another genius way to use your leftover ham, and your waffle iron!

Lunch: You can't go wrong with ham, cheese, and croissants. And I know my kids will also love these Ham and Cheese Pinwheels. There is also a ton of flavor in the ham bone, so a delicious soup is a must-make. This Ham Bone Soup recipe is a simple and fast way to use the bone. Or if you want to use the slow cooker to render that flavor from the bone all day, try this Slow Cooker Split Pea Soup.

Dinner: This Ham and Cheese Tortellini looks Ah-Mazing! If you don't have tortellini in the freezer, this would also be delicious with egg noodles or spaghetti. The Monte Cristo Casserole is another twist on a classic that I'd love to try. Comfort food as it's finest!
