Sam’s Cornbread


1 1/2 cups corn meal

1 cup all purpose flour

1/3 cup sugar

4 tsp. baking powder

1 tsp. salt

2 cups buttermilk

1 egg

3 Tbs. butter, melted

Preheat oven to 425. Once it reaches 425 put your cast iron in for about 10 minutes.

Mix dry ingredients in a large bowl. Mix wet ingredients in a separate bowl. Add wet ingredient mixture to the dry mixture and mix well.

Remove cast iron from oven and spray with cooking spray or melt a few tablespoons of butter in the skillet. Pour cornbread mixture into pan and return to the oven. Cook 20-30 minutes until it’s browned on top enough for your preference.
